Pumpkin Chia Pudding

In a bowl, combine the chia seeds and milk. Stir well to ensure the chia seeds are evenly distributed. 

Mix Chia Seeds and Milk:

Add the canned pumpkin puree to the chia seed and milk mixture. Mix thoroughly until well combined. 

Add Pumpkin Puree 

Stir in the maple syrup or honey for sweetness and the pumpkin spice for flavor. Adjust the sweetness to your liking. 

Sweeten and Spice: 

Cover the bowl and refrigerate for at least 4 hours or, ideally, overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency. 

Let it Set: 

Before serving, give the pudding a good stir to ensure an even texture. If it's too thick, you can add a bit more milk until you reach your desired consistency.

Portion the pumpkin chia pudding into bowls and add your favorite toppings such as chopped nuts, shredded coconut, or a dollop of yogurt.
