Friends, this recipe for a blueberry smoothie has me looking forward to breakfast for the next few days. This past weekend, we were fortunate enough to have a few sunny days in Chicago, and the (slightly) warmer weather induced a need in me for anything light and fresh. Rather than having my typical morning toast on Saturday, I decided to make a blueberry smoothie instead. On Sunday, I repeated the process.

Frozen cauliflower – believe me, you will not taste it! It adds nutrients to the smoothie and helps it achieve a creamy texture.
Frozen banana – The banana, like the cauliflower, makes this smoothie extremely creamy.
Almond milk can be purchased in stores or made at home! If you don’t have almond milk on hand, feel free to use your preferred dairy or non-dairy milk. Water also works!

Almond butter provides protein and healthy lipids.
Maple syrup adds sweetness.
Fresh lemon juice – Its sharp flavor complements the sweetness of the fruit and maple.
Fresh ginger is optional, but excellent. Blend it into the smoothie to add a refreshing kick.

Combine all of the ingredients in a blender and blend until smooth! If the smoothie is too thick to combine, add additional almond milk until you get the required consistency.

2 tablespoons almond butter

1 tablespoon fresh lemon juice

¼- inch piece of fresh gingeroptional


In a blender, place the blueberries, almond milk, cauliflower, raspberries, banana, almond butter, maple syrup, lemon juice, and ginger, if using.

Blend until creamy, adding more almond milk as needed to blend.
